This little plate is the perfect gift this holiday season. Bake individual pies to hand out to friends and family, or serve little pies at your next family gathering for a new spin on the traditional dessert pie.
Here are a few mini pie recipes to get you started:
The Easiest Peppermint Pie
Makes 4-6 Mini Pies
1 pkg. Oreo© cookies
3 tbsp. melted butter
8 oz. whipped cream topping, thawed
½ gallon peppermint ice cream, softened
Crush 25 Oreo cookies. Melt butter and combine with Oreo crumbs. Press crumb mixture into bottoms of mini pie plates to form crusts. In a separate bowl, mix the ice cream and whipped cream. Scoop the cream mixture over mini crusts, and freeze until ready to serve.
Little Pumpkin Pies
Makes 4-6 Mini Pies
2 frozen pie crusts, thawed
3 eggs, divided
8 oz. cream cheese, softened
½ c. sugar
1 c. canned pumpkin
1 tsp. vanilla extract
1 tsp. pumpkin pie spice
Preheat oven to 350°F. Arrange pie crusts on a floured surface, and cut 4-inch rounds. Fit the crust circles into the mini pie plates. Separate one egg, and place the egg white into a small bowl. Beat the egg white until frothy, and brush onto the edges of each mini pie crust. Place the remaining yolk into a bowl, and beat with remaining two eggs. Mix the softened cream cheese, sugar, pumpkin, vanilla, and spice into the eggs until smooth. Spoon into each mini crust. Bake the pies approximately 15 minutes or until the crust edges are golden brown and the filling is set and firm to the touch. Allow to cool before serving.
Mini Apple Pies
Makes 4-6 Mini Pies
2 frozen pie crusts, thawed
3 c. Granny Smith apples, diced
2 tbsp. instant tapioca
½ c. sugar
1 tsp. lemon juice
1/8 tsp. nutmeg
¼ tsp. cinnamon
Preheat oven to 400°F. Arrange pie crusts on a floured surface, and cut 4-inch rounds. Fit the crust circles into the mini pie plates. Cut remaining pie crust into thin strips and set aside. In a bowl, mix the apple, tapioca, sugar, lemon juice, and spices until thoroughly combined. Allow the mixture to stand for 5 minutes before spooning into the pie shells. Use the strips of dough to weave a small lattice crust on top of each pie. Bake the pies approximately 30 minutes or until the crust edges are golden brown and filling is thickened and bubbling. Allow to cool before serving.

- Expect the baking time for mini pies to be about 3/5 of the original baking time.
