This simple recipe is one of my favorites. I should note that I travel to the Amazon jungle twice a year where beans and rice are staples. By Day 3 I’m usually scrounging for Kind Bars and peanut butter (which the Brazilians think is the most disgusting concept on earth), but after being home a few days I’m ready for beans and rice again. However, I like to dress this combo up a little and this friend’s recipe does the trick. It’s the perfect spring/summer recipe when cilantro is fresh and chips and salsa are easy to toss in bowls and set out on a porch table. It’s beans and rice in a ball gown. You’re going to love it and your friends will be asking for the recipe. Not to mention, they’ll think you spent more time on the meal than you did – just tell them “It was nothing. Really.”
6. Serve black been entree over the brown rice, having a nice spread of chips, sliced avocado, salsa, extra shredded cheese and sour cream as toppings.
