While you probably have a base tan and have sweated over a grill by now, today is officially the first day of summer.

Welcome, summer. We are so glad to have you.

In honor of this warm season, here’s a cool recipe that you can easily transport. Say, to the beach for a picnic.

Simple Tomato & Cucumber Salad
Serves 2

2 tablespoons extra virgin olive oil
3 splashes red wine vinegar
Salt and pepper to taste
1 large cucumber, halved lengthwise, seeded & diced
4 Roma tomatoes, seeded & diced
¼ red onion, diced
¼ cup feta cheese, crumbled or diced
Fresh mint leaves, chopped

  • In the bottom of a bowl, whisk together the olive oil, vinegar, salt, and pepper. Add remaining ingredients and toss to coat.
  • Let stand at room temperature for about 30 minutes, stirring occasionally.
  • Taste for seasoning. Serve at room temp or chill and serve cold.

      I love the salad you shared above. My favorite and more for the kiddies is Anything Pasta Salad. We use whatever kind of pasta there is in the house, something that will hold dressing like rotini, macaroni, shells. Then we add pepperoni slices (cut in halves), shredded cheddar cheese, shredded mozzarella cheese, and a firm veggie like broccoli florets, chopped celery, roma tomatoes (cut in halves), chopped zuchini. Then we add ranch dressing and mix until everything is covered with dressing. Be careful not to add too much dressing. Season with pepper, parsley; sprinkle with paprika and chill at least 30 mins. Kiddies love the ranch flavor on their favorites – pepperoni and cheese. Plus they get the stick to your ribs pasta and fresh veggies.

    Oh it’s hard to pick just one dish! Watermelon, cucumber salad, cold pasta salad, strawberry soup, sun tea. Are you sensing a theme? I like something COLD in the summer. It’s so hot here in Houston, that eating anything hot is just not very appealing!

    My fave summer dish is this delicious “Yummy Chicken Salad” (my name for it) that I love to make to bring to parties. It has chix and almonds, and grapes, and it’s sooooo amazing. I better get to the store and buy the ingredients right now. OK later….

    Fruit Pizza: sugar cookie crust, cream cheese & sugar topped with summer’s fresh fruits such as strawberries, blueberries and kiwi. Yum! Yum!

    My favorite summer recipe to make is Red and Black Bean salad. It only has eight ingredients, including spices and comes together really fast. It’s great on a green salad or served with chips or just as a side dish.

    I love the red, white and blue layered fruit salad (strawberries, blueberries and cool whip) that many of us love to make for the summer holidays. (The one on the cool whip label and advertised in Family Circle and Woman’s Day magazines )

    But I love cold, juicy, sweet watermelon or any other fruit on a warm summer day..melon, berries, grapes, pineapple… Yum..awesome even blended into a cold, refreshing smoothie 😉

    The salad sounds yummy!! Not a big fan of cucumbers but I love tomatoes. I also like the blanket, blue seems like a better color as I would think the yellow one might hide in the sand- no contrast.

    My mother-in-law’s recipe for creamy cucumbers. It takes me a time or two each season to get it as good as hers, but I generally can get there!

    I love watermelon and ice cream popsicles!! I also have a delicious recipe called Mile High Strawberry Pie. It has a graham cracker crust with a frozen Strawberry top! So refreshing for Summer!! Thanks for reminding me of it! Your recipe looks so good too!

    My grandmother used to make a salad like this but without the feta. I’m going to try this tonight since we have fresh tomatoes from the garden!
    My favorite salad is the one with grapes and pecans tossed with a cream-cheese/brown sugar dressing. Yumm-O!
