Olé, Amigas! Happy Cinco de Mayo weekend. We can always find a reason to have a good time, right?

Here’s a simple, satisfying dish to feed the Cinco de Mayo masses. Well, actually, this recipe only serves two. But feel free to quadruple it and set up a “Build Your Own Taco” buffet if you’re cooking for a crowd.

Fish Tacos with Cilantro-Lime Slaw

Serves 2

First, make the slaw:

¼ cup canola oil
2 tablespoons white vinegar
2 tablespoons honey
2 limes, juiced
1½ teaspoons salt
½ teaspoon pepper
3 to 4 cups finely shredded cabbage (about half a head)
1 small white or red onion, thinly sliced
½ cup fresh cilantro, chopped
1 jalapeño, seeds removed and finely diced

In the bottom of a large bowl, whisk together the oil, vinegar, honey, lime juice, salt, and pepper. Add the cabbage, onion, cilantro, and jalapeño. Toss thoroughly. Cover and refrigerate for 1 to 2 hours.

Next, marinate the fish:

3 tablespoons canola oil
2 limes, juiced
½ cup fresh cilantro, chopped
1 teaspoon salt
2 tablespoons honey
1 tablespoon cumin
2 large or 4 small firm, white fish filets (such as tilapia)

Place fish in a shallow dish. Whisk together the oil, lime juice, cilantro, salt, honey, and cumin. Pour over fish and marinate about half an hour.
When you’re ready to cook, heat a grill pan over medium-high heat. Sear the fish on each side about 2 to 3 minutes or until cooked through.  

Finally, assemble your tacos:

4 tortillas
1 avocado, peeled and sliced
1 lime, cut into wedges

Warm the tortillas on both sides in a frying pan over medium high-heat. Wrap in a clean dishcloth to keep warm. Taste the slaw for seasoning, adding more salt if needed. Cut the fish into large pieces. Fill each tortilla with fish and slaw. Top with avocado, squeeze lime over all, and enjoy.

    Hello,
    I am so excited about this recipe. I love fish tacos and it is what I order out all the time!
    But I have to say I love, love, love some good old chips, salsa and guacamole. Could make a meal on just that.

    I’ve pinned this recipe to try later. I love to eat chicken quesadillas…I like the cheese more than anything! This recipe looks like a great fresh summer meal. Can’t wait to try it!

    These fish tacos look good. . .I’ve never had them before but might have to try this recipe. My family loves to make soft shell tacos/burrits with a bar where I have all the fixings. We also like a chicken enchilada dish.

    As a side note. I love the pitcher. My Grandma had Fiesta ware. We cousins would pick out our favorite color of plates to use for the family gatherings. I have lots of fond memories of those gatherings with the dishes.

    Thank you for this. Tortilla Soup is my fav. I have my grandmothers Fiesta Ware. Original and so sweet. Remember lots of breakfasts with her using it.

    I love Quesedillas. I love the variety that you can use with them and that you cannot make them wrong! I tend to over fill mine because I want everything on it! Remembering to only put on a little at a time is challenging for me :)

    I love almost ALL Mexican food, the spicier the better! However, Guacamole and tortilla chips are probaly at the top of my list!

    Love, love, love the Fish Taco recipe–need to double the recipe when having friends! Serve it with my favorite “Jalepeno Poppers” that my sweet hubby makes, and lemonade in the beautiful Fiestaware pictured above…sounds like a Happy Mother’s Day to me!!

    Eating Out? Fish Tacos… I like Fish City Grill’s the BEST! Eating in… Chicken Chalupa. A spicy, cheesy dip made with chicken, Velveeta, Cream of Chicken Soup and Jalapenos. (I add mild Rotel tomatoes as well). I serve it with both Nacho Cheese and Regular Doritos.

    I’m going to try this fish taco recipe next week. :) Thanks for the fun, fresh meal idea.

    My favorite mexican dish are chimichangas! If you ever eat at the Cheesecake Factory restaurant, try the baja chicken soft tacos, they are amazing!
