This Weekend: Host a Silver Screen Soirée

This Sunday night, the 85th Academy Awards will bring gowns, glitz, and Oscar gold into our living rooms. Whether you’re hosting a party worthy of a standing ovation or planning a simple night in with your leading man, make a fun night of it. Start by printing off free Oscar Ballots and Oscar Bingo here.  Then whip up a few snacks, including this simple eggplant dip that will be gone faster than you can say, “The envelope, please.”

Easy Eggplant Dip

Adapted from Ina Garten

Serves 6

1 medium eggplant
2 bell peppers, seeded (red, orange, green, or a combination)
1 red onion, peeled
2 or 3 garlic cloves, minced
3 tablespoons olive oil
1½ teaspoons kosher salt
½ teaspoon freshly ground black pepper
¼ to ½ teaspoon cayenne pepper or red pepper flakes
2 tablespoons tomato paste

Preheat the oven to 400 degrees.

Cut the eggplant, bell peppers, and onion into 1-inch cubes. Toss them on a baking sheet with the garlic, olive oil, salt, and pepper. Spread in a single layer and roast for 45 minutes, or until the vegetables are lightly browned and soft. Turn once during cooking.

Place the vegetables in a food processor with the cayenne pepper (or red pepper flakes) and tomato paste. Pulse a few times to blend and taste for salt and pepper.

Serve with pita chips or endive for dipping. Or spread on sliced baguette and sprinkle with feta cheese.

    I started off in my first Ladies Bible Study in 2007 when I was invited by a new friend I met through my son’s marching band club. I had never done a Bible Study before and my first was Beth Moore “Jesus the One and Only” which was perfect for me as my first study. Since then the Ladies group did a number of Beth Moore studies one of my favorites was “Ester.” Over the past 5 years I have submerged much of my free time serving in my church and have brought my family along side of me. My husband and I have been in a couples Small Group for the past 3 years and it is such a blessing to have my husband and I walking in our faith together. My three now young adult children are just as active in our Church and my 21 year old son was nominated to be on our Pastorial Search Team because of all his efforts and strong faith and leadership within our church. Thank you Beth for putting my on the right path to deepening my very own personal relationship with Jesus. Much blessing to you and all your staff and family.

    One of my favorite movies is Steel Magnolias and another is Christmas Vacation. I also love all the movies by the church in Albany GA.. So glad to be part of Lifeway Women.

    There are quite a few movies that I love, BUT I think I’ll go with “Cat on a Hot Tin Roof.” :) Then again, “The Women” (original!) and “Seven Brides for Seven Brothers” are close to that spot…

    My favorite movie of all time is a three-way tie ~ The Way We Were … The Big Chill … Steel Magnolias. Please don’t make me choose:)

    Favorite movie…hmmm…Steel Magnolias has sentimental value to me because I was in Natchitoches when they filmed it. Shawshank Redemption is truly my favorite.
