Tortellini and Tomato Salad
from the Kitchen of Carla Brown, Lexington, KY
Ingredients
2 (9 oz.) pkgs. refrigerated cheese-filled tortellini
1/2 cup olive oil
1/2 cup freshly grated Parmesan cheese
3 TBS fresh lemon juice
2 garlic cloves
1 tsp. Worcestershire Sauce
1/2 tsp. salt
Package of grape tomatoes, halved
1 cup fresh corn kernels
1/2 cup thinly sliced green onions
1/2 cup coarsely chopped fresh basil
Salt & Pepper
Preparation
>> Prepare tortellini according to package instructions.
>> Meanwhile, process olive oil and next five ingredients in a blender until smooth.
>> Toss olive oil mixture with hot cooked tortellini, tomatoes and next three ingredients.
>> Season with salt and pepper to taste.

      Shirley, her recipes are actually found in her Bible studies… and she sometimes puts some recipes on her own personal blog. We’re not aware of a cookbook.

  2. I just have to say that I LOVE Kelly’s Bible study style better than any. Ruth was the first Kelly Minter Bible study I completed. To me, her studies are just what I need…to study the Bible… not read into what the Bible says. Thankful for her and her studies!
