Hey lovelies! My name is Larissa, and while I’m not that new to the LifeWay Women team, I am new to this blog. This summer will start my 4th year as the marketing writer for our products and events, and I must tell you there has never been a more exciting time to be part of this work. We have some truly inspired studies coming out this year, not to mention powerful events happening all over the country. It’s so nice to meet you, and I look forward to interacting with you all!
Our resources are great and all, but there’s something else I’d like to talk to you about today–food! Who doesn’t love a good recipe and girlfriends to share it with? Since summer is around the corner, here’s a recipe that uses two of my favorite farmers’ market items. Peaches and tomatoes might seem like an odd pairing, but trust me, it’s a wonderful, juicy combination.

Peach & Heirloom Tomato Salad
Serves 2 to 4
4 tablespoons olive oil
1-2 lemons, juiced
Kosher salt & pepper
4 handfuls baby arugula
2 ripe peaches, pitted & sliced
2 medium heirloom tomatoes, diced (I used Cherokee purple)
2-4 tablespoons goat cheese, crumbled
Whisk together the olive oil, lemon juice, salt, and pepper for the dressing. Place the arugula on a plate and top with with peaches, tomatoes, and crumbled goat cheese. Drizzle the dressing on top and serve.
